The Ritz teatime is served daily in the famous salon frequented by Ernest Hemingway and other well known people, which today is known as "Salon Proust". It's a haven of peace and tranquility and the home of the most tangy and delicate lemon meringues that I've ever eaten.
These little meringues are just one of the reasons why I visit the Ritz every time I spend time in Paris. I also love the peacefulness about the salon, and how I can sit back, indulge in cakes too complicated for me to cook, and even read my book, over a hot cup of Ritzy Earl Grey (the hotel's signature tea).
Head Pastry Chef, François Perret is responsible for creating all the delicate biscuits, cakes and macarons that seem to endlessly appear during the afternoon.
Salon Proust at Ritz Hotel
Salon Proust is named after Marcel Proust, a French novelist, critic and essayist, who is considered by writers and critics to be one of the most influential authors of the 20th century, and who made the Ritz his second home. Links to the novelist abound in the hotel with his namesake Salon, Proust's beloved madeleine cakes being included in the teatime menu and the design of the hotel's teatime porcelain.
The hotel's signature white teatime porcelain is fine, delicately shaped and simple with its gold leaf midline and golden madeleines handles and it perfectly shows off the exquisite array of sweets, fine teas, coffee and condiments that make up your French teatime.
