Beef Sausage Casserole Recipe
The weather lately has been colder and more windy than we normally have in my corner of Brittany, so we've kept fires going in the lounge fireplace to warm us and hearty meals cooking in the kitchen.
Yesterday I put together a delicious hearty beef sausage casserole and thought you might also like to try it. It's simple and we used the fresh ingredients that we picked up at my local market in Guingamp. I even tried something different by filming a little of myself making the beef casserole and sharing it on Facebook and Instagram. It was fun turning an everyday activity into a short clip and changing things up a bit in the kitchen!

Beef Sausage Casserole Recipe
Ingredients
- 6 Merguez sausages (or thin tasty beef sausages)
- thin beef sausages
- 3 large carrots peeled & chopped into chunks
- 8 small potatoes peeled and halved
- 5 French onions halved
- 2 tins crushed tomatoes
- 1 tin lentils
- Crème fraîche, couple of generous dollops
- Salt, a pinch
- Black pepper, a generous grind
- Olive oil, a drizzle
- Dash of water
- Generous dash of red wine
- Sprigs of Thyme
Beef Sausage Casserole - Method
Pre-heat oven to 180 degrees
Cook sausages in a drizzle of olive oil and when cooled cut into 3 cm lengths
Peel and chop carrots into chunks
Peel and chop potatoes into halves
Peel and separate onions into halves
Add all above ingredients to casserole pot
Add tinned tomatoes and lentils to pot then season with salt, pepper and a drizzle of oil
Add water, red wine and a couple of sprigs of Thyme
Cook for 2 hours or until vegetables are soft when pierced with a fork
Stir in crème fraîche and serve
