French Quiche Lorraine Recipe
Made from only a few ingredients, the traditional French tart Quiche Lorraine is now a worldwide favourite. Eaten hot, warm or cold and served for breakfast, lunch or dinner it's a versatile dish. A quiche is defined as a French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables. As you may have already guessed, the most well-known type of quiche is the Lorraine, which includes lardons or bacon. This delicious dish originates from the French region of Lorraine - hardly surprising given its name!
Quiche Lorraine is one of the most common quiches made in France, and it's popularity has spread throughout Europe, the United States and Australia.

French Quiche Lorraine Recipe
Ingredients
- 250g shortcrust pastry
- 3 eggs, whisked
- 150g lardons
- 250ml crème fraiche
- 150g Gruyère cheese, grated
- chopped parsley (optional)
- tomato slices to decorate (I always add sliced tomato to mine, but it's optional)
Method
- Pre-heat the oven to 180°.
- On a lightly floured surface, roll out the pastry to fit a large flan dish. Line the dish with the pastry and blind bake with baking beans for 15 minutes. Remove the baking beans and return the case to the oven for a further 5 minutes.
- Meanwhile, make the filling. Place the eggs, lardons, crème fraîche and Gruyèye cheese, along with the chopped parsley if using, and mix gently.
- Spoon the filling in to the pastry case and place the tomato slices on top if using. Return the case to the oven and bake for a further 15 minutes.
- The quiche is ready when the top of the filling is golden brown and the mixture is set.
- Serve in slices with a green salad.
